Going into second week on the paleo diet and it's getting difficult! I want donuts and pancakes so bad :( Anyway, I'm not on this diet to lose weight, I'm doing it for my overall health. I'm relatively small as it is and I'm losing weight I can't afford to lose, but I think it's mainly from not getting enough calories. We don't really care for squash and it seems like every recipe online revolves around it! I need some higher calorie snack and lunch ideas that I can grab and go, at least something that takes less than an hour to make lol. If anyone has any recipe/meal suggestions I'd greatly appreciate it! I should also add we are not foodies...we like boring, regular, midwest food which is why this is so difficult!

Since dairy, grains and sugar are not allowed on the Paleo diet, a great way to get Easy Paleo Recipes is to alter your existing recipes with Paleo diet approved substitutes. Here are some ideas:
Milk - Coconut Milk
Bread - Flaxseed Focaccia Bread
Flour - Coconut Flour, Almond Flour
Sugar - Honey, Agave, Maple Syrup, Coconut Palm Sugar
Cooking Oil - Flaxseed Oil, Olive Oil
I also suggest get creative with spices, so you won't miss all the oils and added fats you typically cook with.
Paleo RecipeAnonymous - the key to Paleo is using a variety of ingredients to compensate for flavor of carbs and to provide carbs in fruits and vegetables instead of bread, rice, pasta and potatoes. I use the cook book everyday Paleo by Sarah Fragoso. Lots of scrumptious recipes. The book includes a meal planner and a shopping guide. Follow the meal plan and shop from the list. Shop for a week's worth of meals and you will always have what you need on hand. Just cutting out carbs and not following a meal plan can be dangerous. Paleo is a wonderful life style but you do need the balance of a variety of ingredients.Good luck

Ive just recently started the Paleo diet and I understand you need Paleo fast food at times. There are a few recipes at the site i mention below, but the site talks about a book that you get free with Paleohacks Cookbook. The book you get free is Paleo 4X. This one is all about Paleo recipes with only four ingredients, and they are great. You get six books total. I have it and its worth checking out. I think its one of the best paleo cookbooks especially if you are just starting out.
It is so hard to cut out all carbs. I just made a dish for lunch though it has a few crackers in the bottom, it is not that much. After you put crushed crackers on the bottom of a casserole dish, fill the rest of it up with broccoli and cauliflower pieces then top with some cheese, cover and bake at 350 for 45-60 min till the veggies are tender. It is so good!...
Do you like sweet potatoes? this is not grab and go, but it is tasty:Sweet Potato Pie1 big sweet potato, roasted in oven until soft and peeled
4 eggs1 tsp cinnamon
Blend until smooth, put in pie plate and bake at 350F for 25-30 min. until center is firm and top is beginning to brown.
When i need to cook something with a few ingredients i use my Paleo Recipe Book. Need to say that it is really great! more than 370 cool easy dishes that surprise my friends and my girlfriend! and price of it is really funny....
Paleo diet and recipes are by their very nature simple easy foods to start with. You do NOT use fancy foods or equipment to make these basic meals.Any combination of raw veggies and fruits works for a simple salad.
Sliced meat of some type, I use left over roasts, on the salad makes it a complete meal.There is nothing complicated about deleting the root veggies, breads, pastas, cereals and rices!! Just delete them and get on with eating the fruits and veggies along with a bit of simple roasted meat. Meat being chicken, beef, lamb, or some type of fish.
